Shoot to Win

A couple of weeks ago one of Jeremy's friends from high school and his wife came out for a visit. While Jeremy and Tonya were here we did a little bit of shooting in the backyard.

I won't say who shot better, but her name starts with S and ends with A....but I'm not here to make anyone feel bad and we all know how sensitive the male ego is. It might also be worth mentioning that unnamed better shooter claimed the title without her glasses!!

Play Day

A week before school got out the kids had their annual Play Day.  Usually this takes place on the last day of school, but because of getting rained out several years, they decided to move it up a week.  The usual events are typical track and field type events, but this year they added a Color Run.

It was a FUN day and one that elementary students in our district have looked forward to since before I was a wee-one there! So that's a LONG time!

Summer Meals

I don't know about anyone else, but from about two weeks before school gets out until the last week of June our calendar is jam-PACKED with activities!!  I thought summer was supposed to be relaxing and refreshing, but one look at our calendar and my mind starts to spin.

About a month ago I decided that one way to help keep my sanity during these busy 6 weeks is to have a well stocked freezer...not just a bunch of food, but foods that were cooked and just needed reheated or foods that were ready for the oven or grill.

I made a master list of things that I wanted to have on hand:
  • Taco meat
  • Chicken...cooked and chopped
  • Sloppy joe meat
  • Spaghetti sauce with meat
  • Enchiladas
  • Pizza Dough
  • Hamburger Patties
  • Meatballs
  • Chili {for dogs and Frito Chili Pies}
  • Shredded beef
  • Browned hamburger
  • Mexican Pasta Shells
  • Tater Tot Casserole
Then I proceeded to add at least one and sometimes 2 of those items to my weekly menus and planned to make double.  One to eat that week and one for the freezer.  This made it really easy to get my freezer stocked without becoming just another overwhelming piece of my to-do list.

I also stocked up on chicken breasts, bratwurst and polish sausage when they were on sale.  These things will be so great to just throw on the grill after a late night ballgame or practice.  As will those hamburger patties and they are so much cheaper to do yourself rather than buying them...plus I get to use our homegrown beef this way!

So I wanted to share a couple of recipes that I have tried recently that are DELICIOUS {Westynn's new word!}!!

Tater Tot Casserole

Brown together:
1 lb hamburger
1/2 cup chopped onion

Mix together:
16 oz sour cream
2 cans cream of mushroom soup
1 1/2 soup can of milk
1 tsp salt
1/2 tsp pepper

Topping:
2 cups corn flakes
1/4 cup melted butter

Other: 
2 lbs tater tots
Shredded cheddar

Put tater tots in bottom of 9x13 casserole dish.  Pour sour cream mixture over tater tots.  Top with hamburger and onions.  Cover the casserole with a thick layer of cheddar cheese and then with cornflakes and butter.  Bake at 350 degrees for 45 to 50 minutes.

If you don't like a traditional tater tot casserole, try this one.  I promise you will LOVE it!  Our church ladies made it for our fellowship dinner and I promptly requested the recipe.  I changed it a tad because the original called for 2 lbs of shredded Velveeta and there was no way I was paying for that much processed cheese, so I used regular cheddar and it was just as cheesy and delicious...YUM!  

This makes a HUGE casserole so it's great for a crowd.  Or great to divide up and freeze some for later.  For our family I prepared one 8x8 dish for that evening and divided the rest into 3 aluminum pans and put into the freezer without the corn flake topping.  When it's time to bake those I will defrost in the freezer and add the topping and bake...easy peasy!

Another recipe that I just whipped up this morning to have for tomorrow's dinner is Southwestern Casserole.  This original recipe even calls for one to be put in the freezer!

Southwestern Casserole {from Taste of Home Ground Beef Cookbook}

Southwestern Casserole

1 pkg {7 oz} macaroni
2 lbs ground beef
1 large onion, chopped
2 garlic cloves, minced
2 cans {14.5 oz} diced tomatoes, undrained
1 can {16 oz} kidney beans, rinsed and drained
1 can {6 oz} tomato paste
1 can {4 oz} chopped green chilies, drained
1 1/2 tsp salt
1 tsp chili powder
1/2 tsp ground cumin
1/2 tsp pepper
2 cups shredded Monterey Jack cheese
2 jalepeno peppers, seeded and chopped

Cook macaroni according to package directions.  Meanwhile, in large saucepan, cook beef and onion over medium heat until meat is no longer pink.  Add garlic; cook 1 minute longer,  drain, stir in the tomatoes, beans, tomato paste, chilies and seasonings.  Bring to a boil.  Reduce heat; simmer, uncovered, for 10 minutes.  Drain macaroni; stir into beef mixture.

Transfer to two greased 2-qt. baking dishes.  Top with cheese and jalapenos.  Cover and bake at 375 degrees for 30 minutes.  Uncover, bake 10 minutes longer or until bubbly and heated through.  Serve one casserole.  Cool the second casserole; cover and freeze for up to 3 months.

To use frozen casserole: Thaw in the refrigerator for 8 hours.  Cover and bake at 375 degrees for 20-25 minutes or until heated through.

Okay, so I might say that I was out of disposable aluminum pans for the freezer portion, so I cooled it down a little and put it in a gallon freezer bag, wrote the directions on the bag and threw it in the freezer. I planned to thaw it, cover with cheese and bake like the original casserole.

We'll have this one tomorrow; I'll let you know if it's as good as it smells!!

The parents have no clue

Have you seen this commercial?



It makes my kids and me crack up EVERY.SINGLE.TIME!!

Tonight Preston said,

"The parents have no clue what their kid can do, yet, they LOVE Pepsi Next!"

And that folks is why I LOVE my oldest!!

He has the potential to grow up to make these same type of commercials!!

So, we'll finish our night watching the season premiere of Wipeout and call the day a good one :)

Around the Ranch

Life has just been the everyday, normal sort of things lately!

And I am trying to SOAK it up before summer hits and I get overwhelmed {I can see that on the horizon...someone should warn Jeremy!}

Last month Papa Jene started building us a playhouse/swingset.

But, since then the weather has NOT been cooperative. However, we did make a little progress and here's what it looks like now.

Grandma Janis had a BIG birthday and they went to Houston to celebrate with Janelle and her family, so we took dessert and a gift down once they got home. {Grandma Janis will KILL me if she finds out I posted this...heehee}

The kids and I went to Oklahoma to visit our friends the Barlow's. We went downtown with them while they got their gear for the OKC marathon and while we were walking around we found the Sonic Slushy!

When we got home from OK, I convinced Jeremy to help me drag this old washing machine out of the pasture. Yes, you heard correctly...the pasture! Why people throw their junk in fields and pastures is beyond me, but I'm sure glad they do. It has since gotten the motor removed and been placed in my front flower beds. I am envisioning it with lots of Wave petunias growing out of it this summer!!  It's hard to tell, but it is enamel and a really pretty turquoise color....you'll just have to come out and see it for yourself!

Cambree, Mom and I went to our annual Frazier Family Mother-Daughter Tea. My great-aunt Margaret Patee hosted this year in Beaver Oklahoma and we had a Patriotic Picnic theme.

It was WINDY!! So, don't look too closely at our hair...oh my goodness it was bad!

Then Mindy showed us how to pose like sorority girls! Apparently this makes your hair look longer and your body look slimmer. Look for this pose in our group photo next year!!

Aren't they the most adorable little kittens you have ever seen? My friend Gail had a litter of kittens a few months ago and Cambree had asked her if she could have one. Well, before it got big enough to come home with us, it had an untimely death. So, she has been patiently waiting for another litter. And just after spring break, Gail called to tell us that Wilson had another litter and we could have first pick when it was time.

Sunday was the day! We stopped by the farm on the way home and picked out our kittens. Each kid picked their own and Jeremy and I were quickly talking about how each kid chose a cat so similar in personality to themselves.

Crystal is the boss. She is always the first to eat, the most confident and doesn't shy away from anything....even our giant dog!!

Thunder {Preston} is very un-thunderlike! He waits at the back for the others to go first. Snuggles up to the others and is fine boned. Oh, he also picks on Crystal!

Lightning {Westynn} is bigger bodied and somewhat of a bully! He does whatever he wants, whenever he wants. He's the scratcher :)

Whew that was a LONG post, but really that was over a month's worth of activities!! And I am not even going to pretend like the next couple of months will be better. Starting next week our calendar gets very FULL and we have a lot going on until the end of June. But, it's all fun stuff and stuff that will hopefully keep summer from being TOO boring.
